What Is Ruby Chocolate?

Ruby chocolate is a creation of Barry Callebaut, a Belgian-Swiss group specialising in cocoa. Unveiled in 2017, it has a texture close to white chocolate. Its taste reveals notes of berries and citrus. It comes from so-called “ruby” cocoa beans and contains milk. The details of its production remain confidential. It is believed, however, that ruby cocoa comes from unfermented beans, notably from Brazil. In 2009, Barry Callebaut filed a patent for a “cocoa-derived material” made from these beans. After processing, they take on a red or purple hue, before being defatted.

Presented as the “fourth” chocolate, after dark, milk and white, ruby managed to stand out. Before it, Valrhona’s Dulcey blond chocolate had already entered the market. It is made by caramelising white chocolate.

Ruby Chocolate, the Fourth Chocolate

After dark, milk and white, ruby chocolate was presented in 2017. It comes from special cocoa beans, processed using a specific method. Its pink colour is natural, with no added colouring. On the palate, it reveals fruity, slightly tangy notes, close to red berries. It comes as bars, pralines and pastries. Other cocoa artisans can be found among the chocolate shops of Lausanne (in French).

Canonica ; An Invitation to Geneva

Canonica sends an invitation to discover ruby chocolate at Geneva Airport. Curiosity is immediately aroused, as this chocolate is still unknown at the time. Some prior research only heightens the impatience to learn more on site. The discovery is fully convincing. Since then, a bar or two of ruby regularly ends up in the basket, for a change from the classics.
